Spicy Steve's Indian Recipes

The Malayalam people hail from the South Western Indian State of Kerala. Kerala is a multicultural area that is as much rich in spices as it is in diverse religions and cultures. Fish Sothi is one of the classic Malayalam curries made all the richer by the addition of coconut milk, commonly found throughout Southern India. This is a mild curry but you can spice it up if you like it hotter.

1 lb fresh fish (firm fleshed)
1 sprig fresh curry leaves
1 tsp turmeric powder
1 tsp cumin powder
¼ tsp fenugreek
salt to taste
2 cups coconut milk
4 Tbsp tamarind juice
2 large tomatoes, quartered

Grind to a paste:

6 fresh red chillies
10 shallots
4 cloves garlic

Ingredients for frying:

1 sprig fresh curry leaves
1 onion, finely sliced
¼ tsp mustard seeds
1 - 2 Tbsp vegetable oil

1. Add coconut milk to pot or wok on moderate heat.
2. Add curry leaves, spices, paste, tamarind juice and tomatoes. Stir in well.
3. When mixture comes to a boil, add fish. Boil for 5 minutes while stirring continually.
4. In a separate heated wok, add oil and ingredients for frying. When onions are brown, pour mixture into pot with other ingredients.
5. Simmer covered for 5 minutes and serve.
