VEGETABLE BIRYANI
This was a real winner with our camera crew as they were being introduced to spicy food during the first
shoot. It is mild, but very aromatic in its flavours. Biryanis are great on their own for the vegetarian or
an excellent accompaniment to a spicy meat curry. This is a dish that mixes well, even with other cuisines. Feel free the alternate the spices or the vegetables to create your own unique version. You can even add meat and turn it into a "one pot wonder" for a complete meal!

Ingredients:

3 cups basmati rice, well washed and drained
3 cups water
2 medium carrots, sliced and diced
1 cup frozen peas
1/2 cup frozen corn
1 large onion, chopped and diced
4 Tbsp chopped coriander leaves
2 - 2inch pieces of cinnamon
6 cardomom pods
6 cloves of crushed garlic
6 cloves
1 tsp salt
3 tbs oil

Method:

1. Heat oil and fry onion until lightly golden.
2. Add garlic, cinnamon, cloves, cardomom.
3. Add uncooked rice, peas, carrots, corn and coriander leaves.
4. Stir for 1 to 2 minutes.
5. Add the mixture to rice cooker with water and salt. If you don't have a rice cooker, get one, I cannot live without one and they produce perfect rice everytime. If you don't have one, cook as you would for regular steamed rice.
6. When cooked, fluff up the rice with a ladle, and serve or keep warm until needed.
