SOUPS & SALADS

Gado Gado
(Indonesian salad with peanut sauce )
A traditional Indonesian salad which can be eaten chilled or at room temperature. The salad ingredients can be varied to what you like and what you have available.

Indonesian Chicken Stock
This chicken stock varies from the basic Thai chicken stock we often use in that it has less emphasis on citrus flavours other than the inclusion of lemon grass.

Spinach and Coconut Soup
This is a rich and sweet tasting soup with very delicate and unique flavours. Water convolvulus (kang kung, water spinach) may also be used instead of spinach as this is probably one of the most popular green vegetables to eat in South East Asia.  This is an elegant and modern gourmet soup with humble origins that we serve at special dinner parties. 

Soto Ayam Madura
(Madura Island style chicken soup )
A specialty chicken soup from the Indonesian Island of Madura located off the northwest coast of Java. Portable "Hawker" Food Stands are found all over Indonesia selling this popular soup. This is more of a complete meal than just a soup as it is served with lots of extras.

Be Sampi Mebase
(Balinese Braised Beef Curry in Coconut Milk )
This tasty Balinese dish is very rich and somewhat sweet, although that can be controlled by the amount of sugar you add. I also find it similar to a classic Rendang Beef Curry.


FISH & OTHER SEAFOOD

Ikan Panggang
(Grilled Fish)
All over Malaysia and Indonesia, Ikan Panggang is a common and popular dish you will find, particularly in coastal and riverine areas. Good things come in small packets and using banana leaves is an easy way (and environmentally friendly) for the locals to wrap their fish and grill it. Using banana leaves, which you can find frozen at Asian grocers, semi-steams the fish and retains all the juices. It also allows you to add things to the package, like sauces, and not have them dripping all over your barbeque.

Udang Masak Lemak Rebong
(Indonesian prawn and bamboo shoots in coconut milk )
A mild, creamy prawn curry to be served over steaming rice. This curry highlights the use of fresh turmeric and the simplicity of using only a few integral ingredients.
