(Balinese Braised Beef Curry in Coconut Milk)
This tasty Balinese dish is very rich and somewhat sweet, although that can be controlled by the amount of sugar you add. I also find it similar to a classic Rendang Beef Curry.

2 lbs Beef (inside round or similar) sliced into ¼ inch thick bite size pieces
1 cup water
2 cups coconut milk
2 inch piece of Galangal (laos), peeled and chopped
2 stalks of lemon grass, bruised
3 Tbsps cooking oil
salt & black pepper to taste
fried shallots to garnish

Spice Paste (Combine all ingredients except oil and coarsely grind in food processor):
10 shallots, peeled and chopped
6 cloves of garlic, peeled and chopped
2 inch piece of ginger, peeled and chopped
4 inch piece of galangal (laos), peeled and chopped
6 large fresh or dried red chillies, de-seeded and chopped
(dried chillies have to be soaked first in warm water)
6 small fresh bird's eye chillies, de-seeded and chopped
10 candlenuts (kemiri nuts) - macadamia can serve as a substitute
1 Tbsp coriander seeds
1 Tbsp black peppercorns
3 Tbsps Brown or Palm sugar
4 Tbsps cooking oil
2 salam leaves (optional)

Let's Cook
1. Cook paste in oil over medium heat stirring for about fwo minutes.

2. Add lemon grass and galangal and stir for another three minutes.

3. Add Beef and stir fry until pieces are fully coated in sauce.

4. Add water and bring to a boil and then reduce heat and simmer until meat is cooked. Add coconut milk and cook until sauce has reduced to a thick consistency and the meat is tender.
