Nasi Goreng

(Indonesian Fried Rice )
Ideal as a complete meal or part of a banquet, Nasi Goreng is one of those classic dishes that can be eaten at anytime of day.

4 cups long grain cooked rice (room temperature)
1/2 cup fresh prawns
4-6 cloves garlic, finely chopped
6-8 shallots, sliced fine
1 Tbsp Sambal Oelek (Chilli Paste) or 4 two inch fresh red chillies, de-seeded and chopped
2 Tbsp Kecap Manis (a thick sweet Indonesian soya sauce)
1 fried egg per serving or 2 eggs made into egg omelet strips
1 whole chicken breast, cut into bite sized pieces
4 Tbsps or more oil for stir frying
Pepper and salt to taste

2 tomatoes, sliced thin
½ English cucumber, sliced thin
8 prawn crackers (Krupuk) - optional, to be served on top of dish
Fried shallots for garnish (about ½ cup)

Let's Cook:
1. Pound chillies (or Sambal Oelek), garlic and shallots into a paste.

2. Heat wok and add oil. Stir fry paste for about 30 seconds until fragrant.

3. Add chicken and when chicken is mostly cooked, add prawns. Stir fry until cooked.

4 Toss in rice and mix thoroughly.

5. Add kecap manis and salt and pepper to taste. Mix well.

6. Serve dish with fried egg or strips of plain egg omelete on top. Garnish with prawn crackers, fried shallots, cucumber, tomato and serve.
