Udang Masak Lemak Rebong

(Indonesian prawn and bamboo shoots in coconut milk)
A mild, creamy prawn curry to be served over steaming rice. This curry highlights the use of fresh turmeric and the simplicity of using only a few integral ingredients.

½ lb. Canned bamboo shoots
½ lb. fresh tiger prawns
½ cup thick coconut milk
--(use top portion from an unshaken can of coconut milk - it tends to be thicker)
1 cup thin coconut milk
--(Take ½ cup coconut milk and mix with ½ cup water)
3 tbsp. Oil
salt to taste

In mortar & pestle or food processor, grind into fine paste the following:
5 red chillies (medium sized fresh or dried) - Dried should be soaked first and de-seeded.
¾" piece fresh turmeric
2 cloves of garlic
8 shallots
1 stalk lemon grass

Let's Cook
1. In a hot, well-oiled wok or skillet, fry ground paste for 1-2 minutes.

2. Add bamboo shoots, thin coconut mil. Stir.

3. When bubbling, add prawns and thick coconut milk and reduce heat to a simmer.

4. Stir until prawns are pink.

5. Serve over steamed rice.
