Cold Tofu with Oyster and Soy Sauce
Another of my wife's specialties. Simple, light and refreshing. Don't let tofu scare you off as this dish
will convert you. Served cold, it's a great summer time dish. I think this dish is best if you fry your own
shallots rather than use packaged ones. After you have crisped up the shallots, pour them with the bit of hot boil they were cooked in over the tofu. Delicious!!

2 cakes soft tofu, chilled
2 tbsp oyster sauce
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp chopped coriander
1 tbsp chopped green onions
1 tbsp fried shallots
1 tbsp sesame oil
dash of white pepper

1. Dab soft tofu to dry with paper towel.

2. Place tofu on serving plate.

3. Spread oyster sauce, light and dark soy sauce evenly over tofu.

4. Then spread fried shallots, oil and coriander and green onions evenly over sauces.

5. Add dash of white pepper over tofu and serve.
