Beef Curry with Red and Green Chillies
Dave's Favorite Curry
4 kg. rump steak or suitable meat
1 small fresh red chilli
1 small fresh green chilli
2 cups coconut milk
1/4 cup coconut cream
2 tsp fish sauce
2 tbsp raw sugar (Palm sugar)
4 green shallots, chopped
2 tbsp oil
2 small fresh red chillies
3 cloves garlic, crushed
1 tsp chopped fresh lemon grass
1 tsp grated lemon rind
1 tsp dried galangal
1/4 tsp ground cardamon
2 green shallots, chopped
1/2 tsp cracked black peppercorns
2 tsp chopped fresh coriander root
1/2 tsp shrimp paste
2 tsp lime juice
1. Cut steak into 5 cm pieces. Cut chillies into thin strips. Heat coconut milk in pan,
add steak, bring to boil, simmer, uncovered for about 15 minutes or until tender.
2. Heat coconut cream in separate pan, add curry paste, simmer, uncovered for about 1
minute or until fragrant.
3. Stir paste mixture into steak mixture, bring to boil, simmer, uncovered until liquid is
almost evaporated. Stir in fresh sauce, sugar and shallots.
4. Heat oil in pan, add chillies, cook, stirring for about 2 minutes or until chillies are
crisp. Sprinkle over curry before serving.
