Thai Glass Noodle Salad (Yam Woon Sen)
Thai Glass Noodle Salad description.
200 g lean chicken on minced pork or peeled prawns
3 tablespoons or more chicken Thai soup stock.
1 1/2 tablespoon lemon juice
1 tablespoon fish sauce
1 tablespoon chilli paste
100g cellophane noodles, soaked in warm water for 10 minutes and drained
1 large onion, sliced
2 tablespoons chopped shallots
2 tablespoons chopped fresh coriander
2 to 4 tablespoons fresh mint leaves
1/2 cup shredded carrot
In a saucepan over medium heat, braise meat in stock for several minutes.
Add lemon juice, fish sauce & chilli paste. Cook another few minutes.
Add half the drained noodles & toss gently, making sure the mixture remains moist.
Add remaining noodles and a little more stock if necessary. Taste. When satisfied with flavour consistency, add onions, shallots, carrots, coriander. Toss gently.
Serve on a bed of lettuce.
