Spicy Steve's Thai Recipes
RED CURRY SNAPPER
(Shoo Shi Pla)
Another of the Salathai Restaurant's classic dishes which appeared on Spicy Steve.
1 lb red snapper fillets or similar fish
2 tsp red curry paste
1 cup coconut milk
1 tsp fish sauce
1 tsp sugar
6 Thai basil leaves
2 tsp vegetable oil
2 kaffir lime leaves
1. Heat oil and fry curry paste for less than a minute or until fragrant.
2. Stir in curry paste until well blended.
3. Stir in sugar and fish sauce and add lime leaves.
4. Add fish fillets and poach in sauce on medium heat until cooked.
