Spicy Steve's Thai Recipes


(Khao Phot On Kap Tao-Hu Phat Phrik Sot)
This is a nice simple and quick tasty dish. It makes a great accompaniment for other dishes or can be eaten
alone. It is also truly vegetarian - no shrimp or fish sauce.

2 cakes firm tofu
10 ears baby corn, cut into bite-sized chunks
1-2 tbsp chopped garlic
2 tbsp light soy sauce
1/4 tsp salt
1/2 tsp sugar
5 chillies, sliced diagonally
1/4 cup vegetable oil (you can always cut this down)
1/2 cup basil leaves

1. Cut each tofu into quarters and then cut each quarter into thin slices. Heat oil in a wok and when oil is hot, fry tofu until golden. I would recommend removing the tofu to drain on papertowel if you want to minimize the oil absorption. You can also reduce the oil to fry in and use a non-stick pan with small amount of oil instead.

2. Remove all but about 1-2 tbsps of the oil from the wok, add garlic, and stir fry till golden.

3. Add corn, sugar, soy sauce and salt. Mix well.

4. Add chillies, stir and just before removing from the heat, add the basil leaves and stir until they wilt.

5. Serve with steamed rice.
