STIR-FRIED SNAPPER WITH FRESH GINGER
(Pla Paad Khing)
You can use any firm fresh white fish for this dish. If you want a subtler taste you can also leave out the chillies and emphasis the ginger more.
1 lb snapper fillets, cut into bite size pieces
1 x 1 inch fresh ginger, finely julienned
2 fresh red chillies, finely julienned, seeds removed
2 fresh green chillies, finely julienned, seeds removed
2 cloves garlic, crushed
2 green onions, sliced fine
4 dried chinese mushrooms (soaked in warm water for 45 minutes) Slice the tops, discard the stems
2 tbsp fish sauce
2 tsp sugar
1/2 tsp ground white pepper
1/4 cup fresh corriander leaves, chopped
Oil for cooking
l. Heat oil and saute ginger and garlic until golden.
2. Add fish and mushrooms and cook over moderate heat until fish is almost cooked.
3. Add chillies, green onion, fish sauce, sugar and white pepper and cook for two more minutes, stirring well.
4. Serve garnished with coriander.
