Spicy Steve's Thai Recipes
SWEET MANGO & STICKY RICE
A delicious and traditional Thai dessert that is sure to please. This one comes from Montri Rattanaraj of Montri’s Thai Restaurant in Vancouver.
2 sweet mangoes
2 cups sticky rice, soaked overnight in water
Ingredients for Sauce 1 (for the rice):
1 cup coconut milk
1/2 cup sugar
Pinch of salt
Ingredients for Sauce 2 (for garnish on the rice):
1/2 cup coconut milk
1/4 cup sugar
1. Drain the rice and place in an even layer in a steamer lined with cheesecloth so the rice doesn’t fall through the holes. Steam the rice on full steam for 15 - 20 minutes or until done.
2. In a mixing bowl, mix dissolved sugar, coconut milk and salt. Add the cooked sticky rice and stir until well mixed. Cover and let stand for 10 - 15 minutes.
3. Peel the mangoes off the stone and slice. Place on serving plate. Spoon the cooked sticky rice beside the mango, then top with cooked coconut milk.
